Green Asparagus with Mascarpone and Mustard
2 bunch(es) asparagus, woody ends removed
50g butter
4 shallots, finely diced
1 tbsp vinegar, white wine
1 tsp sugar
1 tbsp Dijon mustard
1/2 tbsp mustard, seeded
100g mascarpone
some sea salt and black pepper
3 tbsp garlic chives, chopped
Bring salted water to the boil and cook the asparagus for 3.5 minutes. Drain and rinse in cold water. Drain again and set aside.
Place butter and shallots in a frying pan and cook for 3 minutes until soft and lightly golden.
Add vinegar, sugar and mustards. Season with salt and pepper, then add mascarpone and bring to the boil for 30 seconds.
Add asparagus and simmern for one minute, then add chives and serve.
